I Make Meatloaf!

It was a cold and sleeting night and we were starving! What to make? 


Meatloaf! Always comforting... Always warms your very soul! 


Here's most of my ingredients... Of course I always add stuff along the way!



About a 2 lb package of ground beef.
One half of a Pkg Onion Soup Mix

1 Jumbo egg
1 cup of milk
3 tblsp cornmeal
1/4 c soy sauce
2 tblsp Basil
3 tblsp br sugar
1 c ketchup

bacon to cover


There's tons of salt and pepper and garlic in the soup mis, so you don't need to really add more.  Remember there are cloves and other spices in the ketchup. The milk you ask? Well, it tenderizes the meat! (Who knew?) The brown sugar just takes the edges off the dish. Try one with and one without and you'll always add just a smidge of the glorious brown stuff!




Throw it all in a big bowl and mix with your fingers... oh, ok... a fork... until everything's all mixed up together.  I like to cover the bottom of my pan with a piece of parchment paper. Not only does the food taste better, it also makes cleanup easier. (See the ingredients picture?) 




Roll it from your bowl into the pan and shape it into a loaf with lots of room around the thing for the grease and juices to flow.  Cover the top with bacon.


I like to bake mine for an hour and a half at 300 degree F. Uncovered.
Then increase the temp to 350 to brown it up a bit.
Oh! We couldn't wait any more!




Pull it out of the oven a good fifteen minutes before you want to eat it. Just like a fine roast or steak, it needs to rest to suck all that nummy juice back in.


This time is always when I finish off my mashed cauliflower,

Oh Heaven! Oh Bliss!




Nice thick slices! The bacon all crisp!




A little BBQ sauce dribbled over and what more could anybody ask for?

I am not a meatloaf fan, not a bacon fan, but this looks fantastic! Maybe it's the brown sugar, maybe it's the onion soup mix. I think I'll get some ground chuck tomorrow and try it!

You are the 3rd blog I've read that is making meatloaf today. It is true comfort food for sure. Your recipe has a few twists to it that I've not tried so I'll have to give it a try. I love the different ways people do things. One of my son's favorite food is meatloaf and he'd always ask for it for his birthday dinner.

This is always a hit for dinner in our house except we all call it meat lump. Sounds delicious by that name doesn't it?
I never really have bacon in the house though so I just cover it with ketchup on top and that gets gooey good.

That looks really good! My family does not like meatloaf. I love it however, but how often do you make meatloaf for yourself?

I always really enjoyed my mom's meatloaf. Oddly enough, I liked it cold in a sandwich with lots of ketchup.
