I Make Lower Carb Hash

With all this fuss today about diets and such, I thought I would post my lower carbohydrate recipe for hash. 








I use Eggplant instead of potatoes.




Pretty much the same recipe as regular hash, saute onion, peppers and eggplant like you are frying potatoes.



About equal parts meat as to veggies. 

Eggs and cheese again....






Num! Num!

That's a great idea, what a neat way to get some eggplant into our diets! Looks yummy!
